Event Description : Instituto Cervantes presents Workshop on cuisine from Madrid.

The gastronomy of Madrid is based on the tradicional cuisine cooked by the people who lived in the “Villa” when the king Felipe II decided to make it the Spanish capital city. In addition to that, the gastronomy of this area also includes the typical products from the near villages. The smell of fried food in olive oil is characteristic odour of this cuisine, such as from the “churros” (cooked in “churrerías”), the Spanish omelette, the sandwiches of fried calamari rings served in “bares”, the "patatas bravas" (fried potatoes with spicy tomato sauce), or the "huevos rotos" (smashed eggs with potatos ham and), among others. Some authors said this cuisine is a result of a quickly elaboration, as the “tascas” usually are crowded and the workers are in a hurry. The wines of the region are the perfect companion for this food underlining the flavour of the dishes. The most famous one is the “cocido madrileño”, that is a vegetables and meat stew which usually appears on the menus of Madrid’s restaurants on Tuesdays. “Cocido madrileño” includes chickpeas, legumes, vegetables, meat and cold cuts, and it is served in three different plates: first a soup made with the stock; then the lagumes and vegetables; and finally, the meat and cold cuts.
