Event Details : “Olive Oil”, by Javier Delgado and Wenceslao Moreda
In collaboration with FECYT, Olive Oil Professional Association and Foods and Wines from Spain.
Synopsis: Olive oil, classified by UNESCO as Intangible Heritage of Humanity in November 2010, is an essential ingredient of the Mediterranean diet and, according to recent research possesses beneficial properties to our health, such as the prevention and fight against breast cancer, among other diseases. This workshop will try to raise awareness of nutritional values, the scientific studies on health claims and the cultural heritage of Spanish olive oil. As part of the activity, there will be a presentation of the organoleptic properties of oil and its uses in gastronomy that will culminate with a tasting of several varieties of Spanish extra virgin olive oil.

Biographies: Javier Delgado Lista, doctor and professor of the Department of Medicine, ORK – Dermatology of the UCO, is also an expert and researcher at the Lipid and Atherosclerosis Unit, of the Internal Medicine Service of University Hospital Reina Sofia.
Wenceslao Moreda, chemist specialized in olive oil, develops his research at the Instituto de la Grasain Seville.
